Which currency applies? Australian bidding for ebay UK item

I am bidding on items quoted in GBP and Gixen has me registered as an Australian.

If I enter a bid, is the amount I enter an amount in AUD or GBP?

It's always the currency of the listing, whatever it is. Your location does not matter. As you described it it's going to be in GBP. Once you schedule your snipe you can see the currency.
