Most likely those auctions had 'Best Offer' buttons on them, haver you noticed any of these ?
It seems Ebay are promoting sellers to use those more and more recently.
You'd need to provide examples if this were to be conformed, but you can see if an auction has been ended early in this way by looking at the bidding page. You can no longer tell what price was offered and accepted though, it always displays the opening bid price even when the actual price was different.

Post subject: Auctions won before I got to bid...
I've had a couple of auctions that I was going to bid on nearer the end of the auction only to discover that they were already finished before they were shown to be ending in Gixen.
The auctions didn't appear to have been ended early by the Seller and each also appears to have been won with one bid.
It's a bit concerning as my confidence in bidding via Gixen has waned a little.
