I do have both the Main and Mirror offsets set to a default of 8 seconds... and in many thousands of transactions, no one has ever even commented on my having two highest bids placed in the same second.
Occasionally, I make the Mirror offset greater on a one off basis, that is when I have reason to believe there will be other snipers, and/or the auction price is already close to my maximum.

I personally use 8 on main & 6 on mirror. 6 is there to avoid appearance of "double bids" in ebay history, though this doesn't really matter.

There isn't really a definitive answer to your questions, opinion varies as to what the best combination is, that is why you are provided with the ability to vary the options. You can choose wht you feel works best for you.
The disadvantages of a later snipe are that you may loose the advantage of the bid increment rule if the price is raised just before you bid would have been placed.
Personally I prefer a larger offset than the default of 6 seconds.
The mirror and main dont 'cancel' each other as such, the one with the larger offset is most likely to succiessfully place a bid since it tries first. Once a bid is accepted by eBay it will no longer accept another for the same amount from the same user.

How should you use the mirror/offset features?
Is there a way that gives an advantage?
To get the closest snipe, should I set both a 3 secs?
Can one cancel out the other?
