Sniping is not a guarantee that you'll win. The only way to guarantee that you'll win is to place the highest bid at any time before the auction closes. It's not the last bid that wins, it's the highest bid. Every time.
The only thing sniping does is prevent someone from from responding to your bid with a higher bid (by not allowing them time to enter another bid). As you experienced, if the bid someone else entered was already higher than yours, they still win when your (lower) bid is entered later.
This is how eBay works. It works the same whether you enter your bid manually or whether you have a sniping service (such as Gixen) place your bid for you.

Recently a bid was made for me 3 seconds before the end of the auction. Howerver, a higher bid was made 15 minutes earlier that was higher than my bid. Thanks but no thanks.
